CULTIVATION AND HARVESTING
Our cultivation method is based only on organic fertilization, both in the ground and on the leaves. We only use natural pesticide and insecticide methods when necessary, for example in the case of the oil fruit fly.
Mechanical brush-cutters are employed to clean and mow the excess of grass around the trees, so no chemical herbicide has ever been used. The mowing and pruning take place in January and the scrub and grass cuttings are burned according to local regulations.
Production process
respecting the most ancient traditions
When the olives have reached the right degree of ripeness, nets are spread on the ground and the harvest takes place by shaking the branches of the olive trees with long poles (bacchiatura).
The olives are immediately taken to an oil mill which boasts two generations of experience and tradition.
Here they are processed with the “hammer system”. We chose not to use stone grinding wheels because, in our opinion, with this system the olives remain in contact with oxygen and the impurities in the air of the premises for too long.
